The Park Hotel, Dungarvan with Holiday Homes and Health Club is located in the beautiful harbour town of Dungarvan, overlooking the Colligan River. The hotel offers excellent facilities including 84 bedrooms, 15 self-catering holiday homes, conference and banqueting facilities, many dining options, and the newly refurbished Riverside Health Club with a 20m swimming pool, sauna & steam room. With easy access to the Greenway, a vibrant nightlife, and picturesque walks, Dungarvan is a hidden gem for both locals and visitors alike. We are recruiting for the following position:
CHEF DE PARTIE
This is a full-time permanent position that is based on-site at The Park Hotel in Dungarvan. The CDP is responsible for food preparation, with their primary duties including preparing food before meal service begins, setting up and stocking kitchen stations and plating cooked foods. The Chef de Partie will oversee all activities conducted at their stations, handling various foods, including meat, fish, vegetables, sauces and pastries. They will prepare, cook and present high-quality dishes. The CDP will assist the Executive Chef and Head Chef to define menu concepts and develop dishes. They will help with the management of health and safety practices. The CDP will monitor supplies and assist with recipe costing and inventory control.
The role is within a very busy environment and offers the opportunity to grow and to develop a significant number of skills.
Person Specification
- You will have a passion for food with at least two years of proven experience working in a similar role or in a kitchen setting.
- Demonstrate excellent use of various cooking methods, ingredients, equipment and processes.
- Ability to multitask and work efficiently under pressure.
- Knowledge of best cooking practices.
Job Type
- Full-time, Hourly rate

BREAKFAST CHEF (Monday – Friday)
You are responsible for ensuring the smooth operation of breakfast service and preparing all food in time for opening.
Role Responsibilities
Your duties include but are not limited to:
- Ensuring kitchen efficiency every morning while on duty
- Ensuring the kitchen is operating at optimal levels for breakfast
- Pre-service: Checking the inventory and ordering required ingredients and ensure excellent food hygiene practices are observed in the entire food chain from storage through to preparation and service
- Preparing for service including cleaning, cutting and preparing the food
- Service: Communicating with floor and other kitchen staff, cooking and serving food
- Post-service: Ensuring the work environment is left hygienically prepared for the next service
- To be fully familiar with the breakfast menu
- To prioritise guest orders and requests at all times
- To ensure all dishes leaving the kitchen are to the approved standard of presentation
- To adhere to all Company and HACCP standards in the kitchen
